Ingredients:


  • 4 oz diced cooked chicken

  • 1/2 cup 0% MF Greek yogurt

  • 1/2 celery stalk, diced 1 green onion, chopped

  • 1/2 apple, diced

  • 1/4 cup red grapes, sliced in half

  • 2 tbsp chopped walnuts

  • 1/2 tsp lemon juice

  • Himalayan salt & pepper, to taste

  • 1 cup greens


Directions:


  1. In a medium sized bowl, whisk together the yogurt, lemon juice and salt & pepper.

  2. Stir in the chicken, apple, celery, grapes and walnuts.

  3. Serve on a bed of fresh greens.

  4. Optional: garnish with cilantro.
