Ingredients:
1 tsp olive oil
1 egg
1/4 cup mushrooms, chopped
1/4 tomato, diced
1/4 red pepper, diced
1 cup spinach
1 tbsp low fat shredded cheese
1 whole wheat tortilla
Directions:
Preheat the oven to 425F or use a panini grill.
Heat up the olive oil in a skillet on medium-low heat. Saute the mushrooms and peppers for 3 minutes, add the spinach and cook until wilted about a minute.
Scramble the egg in a small bowl and add to the vegetable mixture, scrambling for about 2 minutes.
Add the tomatoes and cheese and remove immediately.
Lightly coat one side of the tortilla with a non-stick cooking spray. Place sprayed side down on a baking sheet. Top with mixture (on half) of the tortilla and fold.
Bake 10 minutes or until golden brown. Cut into wedges.
