Breakfast Burrito

Ingredients:


  • 1 tsp olive oil

  • 2 eggs

  • 1/4 cup onion, chopped

  • 1/4 cup mushrooms

  • 1/2 red pepper, chopped

  • 1/2 cup spinach

  • 1 tbsp low fat shredded cheese

  • 1 whole wheat tortilla


Directions:


  1. Heat a skillet over medium heat and add the olive oil.

  2. Add the onion, mushrooms and red pepper with a sprinkle of salt and pepper and sauté about 5 minutes (until cooked).

  3. Scramble the eggs in a small bowl. Reduce heat to medium low and add in the eggs. Scramble the eggs together with the veggie mixture. Add in the spinach and cheese and cook for another 2 minutes.

  4. Remove from heat and place the mixture in the middle of the tortilla. Fold in the ends and roll up.
